How to prepare bitter leaf soup (onugbu soup)

What’s not to love about bitter leaf soup? If you are from the eastern part of Nigeria, you’ll testify to how lovely this soup tastes when properly made. I can’t wait to walk you guys through the process of making this yummy soup right here.

INGREDIENTS:

Bitter leaf

Cocoyam (fresh cocoyam or cocoyam flour)

Cow skin (kpomo)

Goat meat (or any meat of your choice)

Dried fish

Stock fish

Crayfish

Scotch bonnet pepper (6-7)

Onions (one or two bulbs)

Seasoning cubes or powder

Palm oil

Ogiri

Salt

PROCEDURE:

You first wash your meat properly and bring to boil adding one bulb of onion (sliced), dried pepper and seasoning cubes.

Also wash your cocoyam and put it in a pot and bring to boil.

Then as meat is boiling, step aside and debone your dried fish and also wash your stock fish, cow skin and bitter leaf properly with salt.

Also, blend your peppers, crayfish and one bulb of onion.

Once cocoyam has boiled properly, you peel off the outer layer and pound with a mortar or if you have a food processor or blender, you blend with it. However, for convenience sake, most people use cocoyam flour as a substitute.

Then once the meat is tender, you add your blended pepper, crayfish, onion, 2-3 cooking spoons of palm oil, ogiri, cocoyam, seasoning cubes and salt to the meat stock, and leave to boil for 15-20 minutes. If the meat stock is not enough to make the soup, you can add some water to it.

Note: If the soup is too thick, you can add some water to loosen it up a bit. Also taste to make sure the salt and seasoning is enough.

After 15-20 minutes, you add your properly washed bitter leaf and leave to simmer on low heat for another 5 minutes then switch off your gas.

Your bitter leaf soup is ready to be served with pounded yam, semolina. wheat, oats, or whatever you would love to have it with.
