
Variety they say, is the spice of life. I know how daunting it is to decide on what dish to prepare for the family on a Sunday afternoon asides the normal Sunday rice and stew. Well, Nina is here to teach you a new recipe that will blow your mind.
Today, I’ll be sharing my sweet chilli chicken sauce recipe.
Ingredients:
1) Sweet chilli sauce of your choice (You can get this at any big shopping mall in Nigeria, I personally used the “YesChilli sweet chilli sauce,” and I’ll post a picture of the sauce below)

2) Green bell pepper
3) Red bell pepper
4) White onions
5) Chicken breasts
6) Corn flour
7) Seasoning
8) Ginger powder
9) Garlic powder
10) Groundnut oil or olive oil
11) Salt

Procedure:
First of all, you’ll have to chop your chicken breast into bite size pieces.
Then you’ll wash it properly and set in a bowl ready to be seasoned.
Next, you’ll add your seasoning cubes or powder of choice, ginger powder, garlic powder, ground chilli and some salt, then mix all these well with the chicken.
Then you’ll set the chicken aside in your refrigerator to marinade for 2 to 3 hours so the spices will get into the chicken.
Then you’ll chop your red bell peppers, green bell peppers and onion into big chunks as seen in my picture below, and set aside.
Now, after the chicken must have marinaded for about 2-3 hours, you bring it out of the refrigerator.
Then you’ll bring a clean bowl, add a cup of corn flour and one fresh egg. Mix the flour properly with the egg and add a little water to make a thick consistency.
Add your chopped marinaded chicken into the flour and egg mix, and mix properly so that the chicken is well coated with the egg and flour mixture.
Put your pan on fire and add some groundnut oil that will be enough to deep fry the chicken.
Fry the chicken until golden brown and set aside.
Now is the time to make the sweet chilli sauce, read on….
Add 2 cooking spoons of groundnut oil in your pot or pan.
Then put in your onion chunks and stir fry for 40 seconds.
Then add your chopped red bell peppers and green bell peppers and stir fry for 30 seconds.
Next, you’ll add your sweet chilli sauce and mix with the onion and peppers.
Finally, add your chicken chunks and mix thoroughly.
There you have it, your sweet chilli chicken sauce is ready to be consumed.
You can pair it with basmati rice, potato, pasta or you can even have it alone.
